Chocolate Spice Quickies

Chocolate Spice Quickies!  What a fun name!  I’m sure it is referring to the mere 7 minute baking time, rather than the total time of the recipe which happens to includes 4 hours of chilling.  However I love a good icebox cookie – throw it in the freezer and slice off as many cookies as you’d like at one time for the next couple of months.  So easy…good thing because I've been seriously lax in my Tuesdays with Dorie baking assignments.  Mostly this isn't a result of time or effort though - but from my husband's plea to stop baking for a bit!

This dough comes together quickly in a food processor – no Kitchenaid or elbow grease required.   I can tell that I probably didn’t grind the almonds long enough as they are still visible in the cookie dough – but no matter, they taste fabulous and I actually like the look!

With the nice spiciness of cloves – which rarely get used outside of the holidays – these will go wonderfully with some Chai Tea as a dessert or pick me up.  These are also appropriate right now as the weather has finally drifted towards fall – there’s a chill in the air, light sweaters have come out in the evenings, and warm spices and baking tie right in with the autumn feeling outside.
